will bring a Spanish tapas concept to the Sparkman Wharf dining garden.

A Tapas and Wine Concept by Mise en Place created to give big flavor and big fun

In Spain, tapas bars are called tasca and it is difficult to convey the exuberant liveliness of a tapas bar because
they are not just about drinking wine… and not just about eating little foods. A tapas bar is more a window
into the Spanish soul and the Spanish gastronomic mentality. They are egalitarian places where people of all
classes will congregate. Children are welcome.

It’s hard to think of a tapas bar as an eating establishment because it functions more like a trysting
establishment. Conversation ranges from the mundane to the philosophical, and the food ranges from the
simple toasted almond to the complex callos (stew). You will be able to taste snippets of a variety of foods
just as you would hear snippets of conversation perhaps about the lottery, bullfighting, the local team, or the
local politics.

– Clifford A. Wright won the James Beard/KitchenAid Cookbook of the year awards and the James
Beard Award for the Best Writing on Food in 2000 for A Mediterranean Feast (William Morrow),
which was also a finalist for the International Association of Culinary Professionals’ (IACP) cookbook
of the year award that same year.

Mediterranean expert, Clifford Wright, tells the story of the inspiration for Montados by Mise en Place
at Sparkman Wharf. The scene at Sparkman Wharf makes it the perfect setting for Tapas. In turn it
creates the perfect opportunity for Mise en Place to extend its community restaurant personality and
for Chef Marty Blitz and team to have some fun creating authentic flavors of traditional tapas dishes
with occasional modern twists. Add in simply delicious Spanish white, red, rose, cava and sangria and
you have the recipe for a good time.

The project has already begun bringing people together as Ben Carson, a former employee of Mise
en Place and now General Manager for Olé Imports has collaborated on the project with Chef Blitz
and Proprietor Maryann Ferenc. Ben’s love and knowledge of Spanish wines and traditions along with
Chef Blitz’s penchant for big flavor and Maryann’s Passion for community gathering around food and
drink make this our first perfect Montados pairing!
